DISTINCTIVE QUALITIES: Fresh Burgundy truffles from Europe (Tuber Uncinatum) are available from September–December. These wild and prized truffles are known for their intoxicating perfume that is sought after by the world’s finest chefs. Intense flavors resemble hazelnut and garlic. The firm flesh presents itself in beautiful hues from deep gray to chocolate browns with marbling from ivory to gold with a lovely textured outer skin.
What are Burgundy Truffles?
Burgundy Truffles, also known as Autumn Truffles or Tartufo Nero di Fragno in Italian, are seasonal truffles harvested from Northeastern regions of Italy and France. From the family Tuber Uncinatum / Aestivum, Burgundy Truffles are a delicacy that are only available once a year.
How do you use Burgundy Truffles?
Burgundy Truffles are best used to top traditional Italian pastas and risottos. Sliced thinly with a truffle slicer or even grated with a cheese grater, you can easily enhance soups, sauces, and butter.
What do Burgundy Truffles taste like?
Burgundy Truffles share many characteristics with Black Winter Truffles, with a rich and aromatic smell that permeates with oak and pine-nut notes. Burgundy Truffles are much more mild and contain more resemblance to hazelnuts and other earthy tones when consumed.
SERVING SUGGESTIONS: Store truffles in your refrigerator near eggs and cheeses and you will discover the wonderful truffle flavor will have gently kissed them. Grate or thinly shave over your favorite warm dishes such as risotto, pasta, or eggs. The radiant heat of the dish is just enough to enhance the fresh flavors of white truffles.
