Goose Confit – Pre-Cooked
DISTINCTIVE QUALITIES: Goose confit is certainly one of the most famous French meals. Our version is pre-cooked and ready for you to warm and enjoy as you would in the finest restaurants. Typically served as duck, we enjoy twisting the presentation with an unexpected less gamy bird. Both the legs & thighs of free-range geese are marinated overnight in a specially curated, secret blend of fresh herbs and spices. Then, they are slow-cooked in pre-seasoned, rendered duck goose fat. This process infuses them with a juicy flavor that creates a most tender, "fall off the bone" dining experience. A simple, but exceptionally impressive and delicious meal.
BEHIND THE PRODUCT: We take the arduous task of preparing this delicacy from you and present only the finest rendition of a famous confit. Preparing a confit is more technique than recipe. It is essentially a way of macerating the leg and thigh meat of goose with its own dense fat. Initially developed in Gascony, France, this method was developed centuries ago to naturally preserve precious meats.

STORAGE/PREPARATION: Our goose leg confit is pre-cooked and needs only to be thawed, warmed up, and plated. Keep frozen until ready to cook. Thaw in the refrigerator overnight. Preheat oven to 350º. Remove from the package and place on a baking sheet. Bake for approximately 15-20 minutes; broil 5-10 minutes further to achieve a perfectly crisp, golden skin. Plate with mashed, or potatoes au gratin or our wild rice, and a freshly steamed or sauteéd vegetable of your choice.
