What’s the Difference Between a Cowboy Ribeye and a Ribeye?
Cowboy Ribeyes are typically larger and more extravagant than the typical ribeye steak that you would purchase from the grocery store. The Cowboy ribeye contains more meat beyond the eye and is typically frenched, or cleaned of meat and fat on the cap of the bone.

SERVING SUGGESTIONS: Allow beef to come close to room temperature before preparing. For medium-rare, season with salt and pepper to taste, then pan sear in a cast-iron skillet or grill until the internal temperature of the beef is 125ºF to 130ºF.
