DISTINCTIVE QUALITIES: Fresh black winter truffles from France and Italy (Tuber Melanosporum) are available from February–April. Also called Périgord truffles, these wild and rare truffles are known for their intense aroma that is highly prized by the world’s finest chefs. Périgord truffles are truly one of the most beautiful edible gifts from nature. Highly intense and earthy flavors are those of oak, musk, and wood. The firm flesh presents itself in beautiful hues from deep gray to chocolate browns with marbling from ivory to gold.

BEHIND THE PRODUCT: Keenly-trained dogs have replaced foraging pigs. This is because the pigs naturally devoured too many of their finds!


SERVING SUGGESTIONS: Never cook truffles! Grate or thinly shave over your favorite warm dishes such as risotto, pasta, or eggs. The radiant heat of the dish is just enough to enhance the fresh flavors of white truffles.
