Lamb Rack

Ingredients:

  • 1 (8-bone) rack of lamb, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 garlic cloves, minced

Instructions:

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together the olive oil, rosemary, thyme, salt, pepper, and garlic.
  3. Rub the mixture all over the lamb rack, making sure to coat it evenly.
  4. Heat a large skillet over high heat. Add the lamb rack, fat side down, and sear for 2-3 minutes until the fat is golden brown and crisp.
  5. Turn the lamb rack over and sear the other side for 2-3 minutes.
  6. Transfer the lamb rack to a baking sheet and roast in the oven for 15-20 minutes, until the internal temperature reaches 130-135°F for medium-rare.
  7. Remove the lamb from the oven and let it rest for 5-10 minutes before slicing and serving.
