DESCRIPTIVE QUALITIES: This Paleta, meaning the front leg and shoulder, comes from the noble Pata Negra Iberian pig, which is known to be the highest quality cured ham in the world. The Iberian pig gets its authentic and prominent aroma and flavor from grazing in the open pastures filled with matured acorns from oak trees during the montanera season.
