American Paddlefish Caviar
DISTINCTIVE QUALITIES: Paddlefish caviar (or roe) closely resembles traditional sturgeon caviar in both size and color. From freshwater sturgeon, Paddlefish (Polyodon spathula), has an earthy and bold flavor. It has a slightly firm texture and pop. It is a perfect introductory caviar. Also known as Spoonbill, It also is a less expensive, yet impressive caviar to serve guests.
SERVING SUGGESTIONS: Enjoy Paddlefish (sometimes called Spoonfish) caviar just as you would a sturgeon caviar – pure or with traditional accompaniments such as créme fraîche, blinis, and chopped egg.
