Wagyu Beef Tataki


  • 500g F1 Australian 8/9 Wagyu beef
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sake
  • 1 tablespoon mirin
  • 1 teaspoon sugar
  • 2 garlic cloves, grated
  • 1 thumb-sized piece of ginger, grated
  • 1 bunch of spring onions, finely chopped
  • Salt and pepper to taste
  • Sesame seeds for garnish


  1. Begin by preparing the marinade. In a bowl, mix together the soy sauce, sake, mirin, sugar, grated garlic, and ginger. Set aside.
  2. Heat the vegetable oil in a pan until it's hot. Season the Wagyu beef with salt and pepper and sear it in the pan for about 2 minutes on each side until it's browned. Remove the beef from the pan and let it rest.
  3. After the beef has rested for about 5 minutes, slice it thinly and arrange it on a plate.
  4. Pour the marinade over the sliced beef and sprinkle the finely chopped spring onions and sesame seeds over the top.
  5. Serve the Wagyu beef tataki with a side of steamed rice and some sautéed vegetables.
