Our prime bone-in veal chops, also known as veal chop scallopini, are beautifully tender and perfect for a simple yet elegant meal. The veal used is taken from the most tender part of the calf, the loin. Additionally, we also remove the fatty excess from the tenderloin and leave you with only the most succulent cut of veal imaginable.

Our prime veal is free-range and milk-fed, has passed the most rigorous testing, and is USDA-approved.  It is sourced directly from our small-batch producers in the Rocky Mountains of Colorado. It is hormone and antibiotic free.
