DESCRIPTIVE QUALITIES: The king of meat! This prime NY center cut beautifully marbeled and the perfect steak. A natural beef that meets our extremely high standards for taste, texture and marbling. The USDA applies the term "natural" to foods which are minimally processed and without added enhancers or ingredients. We insist the beef we source is raised without the use of added hormones or antibiotics and is pasture raised and finished on a vegetarian diet of grains and grasses. This brings out the marbling and provides a high level of grading.

BEHIND THE PRODUCT: A close relative of the Porterhouse or the T-bone, the Center Cut New York Strip is a juicy, tender morsel derived from the heart of the beef short loin. The short loin is a sweet spot for marbling — an indispensable catalyst of flavor and moisture retention in steak.

Key Features

SERVING SUGGESTIONS: Allow beef to achieve room temperature before beginning. Season with good quality Maldon sea salt and freshly cracked black pepper. Preheat a cast-iron skillet or grill to medium-high. Sear the New York Strip equally on each side, aiming for a medium-rare consistency (internal temperature registering 125ºF to 130ºF.)

Alternately, you can reverse-sear the steak by starting the cooking process in the oven, then finish it by searing in a hot pan. Either way, after you've finished that succulent steak, save the bones for a hearty beef stock.
