Beef Kebabs

Ingredients:

  • 1 lb filet mignon cubes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Metal or wooden skewers (soak wooden skewers in water for 30 minutes if using)

Instructions:

  1. Marinate the Beef: In a large bowl, combine olive oil, minced garlic, lemon juice, rosemary, thyme, smoked paprika, salt, and pepper. Add the filet mignon cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  2. Prepare the Skewers: Thread the marinated beef cubes onto the skewers, alternating with chunks of red bell pepper, yellow bell pepper, and red onion.

  3. Preheat the Grill: Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

  4. Grill the Kebabs: Place the kebabs on the grill and cook for 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender and slightly charred.

  5. Serve: Remove the kebabs from the grill and let them rest for a few minutes. Serve hot, garnished with additional fresh herbs if desired.
