Our cattle are pasture-raised and fed a vegetarian diet of grass and grain, creating desirable fat marbling. While others pump their cattle with hormones and antibiotics to artificially bulk up their meats , here at Kolikof Gourmet and Caviar, we pride ourselves on all-natural and humanely raised cattles for our premium cuts of prime steak. There are no added enhancers, antibiotics, or hormones to be found in our cattle. 

BEHIND THE PRODUCT: When a New York strip steak is cooked at high heat, the wonderful flavor of its fat is released throughout the cut. This cooking process gives our prime NY strip steak its wonderful richness and flavor. Searing the fat cap allows your cast iron pan to be coated with a delicious yet practical flavoring that will enhance the taste of your dry aged NY steak.

Following these simple instructions allows for a simple meal that is sure to please even the most traditional New York steak lovers.

SERVING SUGGESTIONS: Allow the cut of prime NY steak to come close to room temperature before preparing. The room temperature beef allows for a more intense and flavorful initial sear.

For the perfect medium-rare prime steak, season with salt and pepper to taste, then pan sear in a cast-iron skillet or grill until the internal temperature of the beef is 125ºF to 130ºF. Allowing the steak to cook at a medium-rare temperature ensures for a maximum flavor profile without drying out the cut of premium beef..
