Bowfin, also known by its Cajun name "Choupique", is a wild American Caviar known for its distinctive earthy flavor, hints of spice and tang. Bowfin caviar is a fantastic substitute for Sturgeon Caviar and has its distinct benefits that differ.

Though not sturgeons, this ancient freshwater species produces grains that are small in size, firm and brown to jet black in color. Unlike sturgeon, Bowfin caviar will turn red if heated. These are perfect to top on cooked dishes. Bowfin Caviar can be used in a multitude of recipes and often served as an appetizer. Generously top bowfin caviar on top of a blini with creme fraiche for an easy yet elegant starter.

Serve well chilled, straight from the tin set over ice. Use a non-metallic spoon (mother-of-pearl is included) — metal can dull the flavor. Enjoy on its own, on the back of the hand, or with blini and crème fraîche, finely chopped egg, and chives.

SHELF LIFE: Four weeks refrigerated. Once opened, use within 72 hours of opening or until the use-by date, whichever is sooner.

STORAGE: Keep refrigerated. Store at 32ºF to 34ºF. Refrigerate promptly upon receipt.
