Prime European Veal Parmigiana

Ingredients:

4 prime European veal cutlets (approximately 1/2 inch thick; 2 lbs total)

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs

1 cup seasoned Italian bread crumbs

1/2 cup grated Parmesan cheese

2 cups marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

1/4 cup olive oil

2 tbsp fresh basil, chopped (optional, for garnish)

2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions:

Prepare the ingredients:

Preheat oven to 375°F (190°C).

Season both sides of 2 lb. prime European veal cutlets with salt and pepper.

Set up breading station:

Spread flour in a shallow dish.

Beat eggs in a second shallow dish.

Combine Italian seasoned breadcrumbs with 1/4 cup of Parmesan cheese in third shallow dish.

Bread the veal cutlets:

Lightly coat each floured veal cutlet in the flour while shaking off any excesses.

After dipping into the beaten eggs to remove any extra egg that may remain, coat them with breadcrumb mixture.

Dredge them in the mixture gently so as not to push down too hard on it. Repeat this process for all your cuts of meat.

Cook the veal cutlets:

Heat olive oil over medium-high heat in a large skillet.

Add the breaded cutlets to skillet; fry until brown and crisp about 3-4 minutes per side depending on thickness. You may do this one batch at a time if needed; otherwise overcrowding your pan might ruin your recipe.

To drain out any excess oils put cooked cutlets on kitchen roll covered plate.

Assemble the Dish:

Spread marinara sauce over bottom of baking dish;

Put veal pieces that have been browned on top of marinara sauce.

Spread remaining marinara over the veal.

Pour shredded mozzarella cheese and remaining 1/4 cup Parmesan cheese on top.

Bake the Veal Parmigiana:

Put baking dish in preheated oven;

Cook until bubbly and melted for about 20-25 minutes as per your preference.

Garnish and Serve:

Out of oven, let it cool for a few moments.

Optionally garnish with chopped fresh parsley and basil leaves

Traditionally served with a side of spaghetti, salad or garlic bread; hot veal Parmesan will be perfect!
