Bowfin, también conocido por su nombre cajún "Choupique", es un caviar americano salvaje conocido por su distintivo sabor terroso, toques especiados y picantes. El caviar Bowfin es un sustituto fantástico del caviar de esturión y tiene distintos beneficios que difieren.
Aunque no son esturiones, esta antigua especie de agua dulce produce granos de tamaño pequeño, firmes y de color entre marrón y negro azabache. A diferencia del esturión, el caviar Bowfin se vuelve rojo si se calienta. Son perfectos para acompañar platos cocinados. El caviar Bowfin se puede utilizar en multitud de recetas y, a menudo, se sirve como aperitivo.
