Wild and ocean-fresh from the waters of the Dover Strait between England and France, these royal fish are flown directly to us every Monday—only on Mondays can we ship them fresh for Tuesday delivery. On other ship dates, you will receive flash-frozen Dover sole (unless you specify "fresh" at checkout).

KITCHEN READY DOVER SOLE: This is our most popular Dover sole. Also known as "KR"—this is a delicate, whole, skinned Dover Sole with the spine intact. The spine is easily removed with a beautiful lift of the tail. Kitchen ready should be your choice if you would like to present your guests with the authentic five-star restaurant experience of a tableside deboning presentation.
DOVER SOLE FILLETS: For those less adventurous, we have fully cleaned, skinless Dover Sole fillets. Available in 1-lb fillets.
WHOLE DOVER SOLE: For hard-core chefs, we have the finest whole Dover sole you can find! Available as 2-lb whole fish.
