This Truffle Caviar is made from the juice if the black winter truffle, obtained during its cooking. The prestigious juice is reduced into small pearls through an innovative and sophisticated technique called “sferification." Thus, small pearls with the taste of the truffle and the same colour and texture of the caviar are the result!
