Exceptional flavor is found in every delectable bite of our New Caledonian Salt Prawns (Litopenaeus stylirostris), also known as French Blue Prawns. The perfect combination of sweet and briny pairs with a creamy but firm texture that is more similar to lobster than prawns. The use of GMO's and antibiotics is banned from its aquaculture.
BEHIND THE PRODUCT: Carefully watched over by the native people in the region, these beauties achieve their brilliant color by feeding off of the surrounding organic marine plankton. Nestled between Tahiti and Australia is the secluded island of New Caledonia. New Caledonian Salt Prawns have can be raised for only seven or eight months a year, making them one of the rarest prawns available.
SERVING SUGGESTIONS: Simple Asian ingredients such as ginger and lemongrass accent its sweetness. Grill or steam as you would lobster. Blue Prawns are also the only French shrimp discerning enough for serving sashimi style in Japan—do so simply with a hint of fresh lime and salt.

Spanish Red Carabineros Jumbo Prawns
$264.00
-
DISTINCTIVE QUALITIES: More like dwarf lobsters than shrimp—an incredible 2-3 per pound, Red Carabineros Jumbo Prawns (Plesiopenaes edwardsianus) are very large and known for their ruby red coloring that remains even after cooked. The fleshy, distinctive tail meat is divinely buttery.
BEHIND THE PRODUCT: Sometimes called Scarlet Cardinal Prawns, the Carabineros Prawn earns its name from the brightly colored red uniforms of the Spanish Police (Carabineros). Their color comes from their diet of pink plankton.
SERVING SUGGESTIONS: The most important thing to know about cooking red carabineros is to be sure to cook them slowly, and take care not to overcook them. Steam (do not boil), poach, grill, or sauté as you would lobster. To panfry, heat your favorite olive oil or butter (we recommend Echiré French Butter), in a pan. Add a generous amount of salt to the pan, and cook 3-4 minutes on each side. Stop cooking when the head is swollen. Enjoy the firm tail meat, and use the heads and shells for soup stock. True seafood connoisseurs will enjoy eating the legs and head. In Europe, the heads are often enjoyed as the ultimate delicacy of the sea.

Ipswich Clams
Special Order / Market Price. Please call or email.
– Special Order-
Quantity: 2 lbs. (8-12 pcs per lb.)
Country of Origin:USA (Ipswich, MA)
Distinctive Qualities: There is only one true whole belly clam, and that is the Ipswich Clam (Mya arenaria). To the clam connoisseur, there is no other clam than these soft-shell, saltwater beauties. Please don't call them "clam strips," as that would be an insult to their creamy, slightly salty, yet sweet and juicy "bellies."
Behind the Product: Ipswich Clams are also known as "belly," "soft-shell," "steamers," or "longneck Clams." Accept no imposters! Our Ipswich Clams are harvested only from the famous New England Coast that is known world-wide for its fine seafood. They are dug for by hand during low tide. If you have ever craved true whole belly fried clams or steamers from New England, you know that they are hard to come by—this is due to the fact that their soft shells are delicate and can easily break in transit. Our careful shipping methods ensure their safe arrival from our doors to yours.
Serving Suggestions: Because of its density, the Ipswich clam is the very best clam for frying because its center remains juicy and sweet. You can't go wrong with this delicacy—also favored simply steamed and dipped in drawn butter.
- Raw. Must be cooked prior to eating. Keep frozen. Thaw by refrigeration for 12-18 hours prior to cooking.
